Guilt Free Gazpacho

It's summertime and it's hot and humid outside. You're faced with a few dilemmas. First, you need something to satisfy your hungry and simultaneously cool your body down. Secondly, you need to maintain or take further steps towards reaching that quintessential summer body. (So you need to watch what you eat). From the shores of Spain and Portugal come Gazpacho (or Gaspacho). It can be described as either a cold tomato soup or a liquid salad. You'll describe it as delicious.




Gazpacho is a simple combination of (but not limited to) tomato, garlic, onion, olive oil, cucumber, vinegar and bell pepper. (Proportions may vary from recipe to recipe). All ingredients are then mixed together in a food processor or blender. This isn't molecular gastronomy. This is gazpacho. The equation is simple, Gazpacho + Summertime = No regrets.
